Great barbecue, once a scarcity in New York, is having an overdue
heyday, helped in no small part by this weekend's Big Apple Barbecue
Block Party. The fifth-annual carnivore's circus rolls into Midtown
with 15 tons of smoked, slow-roasted, sauce-slathered meat from a
dozen of America's finest pit-masters. A two-day fest of ribs (spare
and baby-back), shoulders, brisket, butt, tips, whole hogs, and creamy
sides celebrates the secret tinkerings and family recipes from 'cue
icons like Bryan Bracewell of Southside Market & BBQ in Elgin, Texas,
who still makes his hot sausages from the original 1882 recipe. Live
sessions from soul singer Binky Griptite and the Afrofunk Budos Band
provide an all-American soundtrack to our finger-licking pastime.
